Healing High's delightful recipe for a Ginger Cake, perfect for cozy gatherings like Bonfire Night or the Christmas season. This incredibly moist and flavorful traybake combines warming spices and rich treacle for a truly comforting dessert experience.

Ingredients
200g (7 oz) plain flour
1 tsp baking soda
1 tbsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
100g (3.5 oz) unsalted butter
100g (3.5 oz) dark brown sugar
200g (7 oz) black treacle
150ml (5 fl oz) milk
1 large egg
Preparation
Step 1
Preheat your oven to 160C (320F) and line a rectangular baking tray with parchment paper.
Step 2
In a bowl, sift together the flour, baking soda, ginger, cinnamon, cloves and nutmeg. Set aside.
Step 3
In a saucepan over lower heat, melt the butter, sugar and treacle together, stirring until smooth. Remove from heat and let it cool slightly.
Step 4
In a separate bowl, beat the egg and mix it with the milk.
Step 5
Gradually add the milk mixture to the cooled treacle mixture, stirring continuously.
Step 6
Slowly incorporate the dry ingredients, mixing until you have a smooth batter.
Step 7
Pour batter into the prepared baking tray, spreading it evenly.
Step 8
Bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.

Let the cake cool in the tray for a few minutes before transferring it to a wire rack to cool completely.
